It was a cold and rainy Saturday night and I was completely craving something warming and easy to cook for dinner. I didn’t want to order takeaway so looked around at what I could make with the ingredients in my pantry. My go to dishes when its cold outside is usually a one pot dish which is easy to prepare and flavour packed. I love spicy food and one of my absolute favourite is Thai red curry, in fact anything Thai and I just love it!
